Ice cream


Results in about 3 x 3/4 litre (maximum for most ice cream machines)

  1. Drain the youghourt/cultura in 2 coffe filers in a funnel (will take about 2 hours).

  2. Mix egg yolks and sugar and whip it light and foamy (will take a couple of minutes with an electric mixer).

  3. Add yoghourt/cultura.

  4. Whip the cream almost hard in another bowl and mix the two parts with the lemon juice.

  5. (If you want to add other flavors - see below)

  6. Start the ice cream machine and pour (1/3 of) the mixture. After 30-45 minutes you can transfer the almost frozen ice cream to a container an leave it in the freezer until you will serve it. (If you prepare the ice cream more than 12 hours before you serve, you should allow it to thaw a bit in room temperature for about 10 minutes before serving)

Variants

Ice cream with: Chocolate

Step 1: Donøt drain for more than 30 min

Step 5: Melt 100 g finely chopped chocolate in a micro wave oven 2-3 minutes and mix well with 50 g honney and 1,5 tsp of cocoa.

Is med chokolade
Ice cream with: Green tee

Step 4-6: Leave out the melon juice, and add 2 tsp green tee powder when the ice cream has been poured into the machine.

Is med grøn te
Ice cream with: Strawberry/raspberry

Step 5: Blend and add 350 g raspberry or strawberry (you may pass the raspberries through a sieve to remove the tiny seeds).

Ice cream with: Coffee

Step 5: Add 1 tsp finely grinded espresso cofee (beans). On this picture, the ice cream is frozen in a muffin tin, and some passionfruit sirup has been poured over it.

Ice cream with: Cinnamon and star anis

Step 4: Use only 2 dl cream. Step 5: Bring 1,5 dl full milk to a boil with 2 cinnamons and 3 star anis (carefully, it will boil all over very easily) and let it set for 10 minutes. Sieve, chill completely to room temperature before pouring it into the ice cream machine.

Ice cream with: Nougat (hard)

Step 2: Use only 60 g of sugar

Step 5: Add 1 portion of Nougat (hard)

Is med nougat (hård)
Ice cream with: Walnuts

Step 5: Crack and blend to powder 80 g walnuts (about 250 g with shells). Add it to the ice cream tother with 1 teasp finely grinded, coffe beans. If you prefer a stronger, nutty taste, boil the nut flour with 1 dl of the cream and cool completely before proceeding.

 
Ice cream with: Vanilla

Follow the basic recipe. May be served with a little (good quality) balsamico drizzled over.

Ice cream with: Apples

Step 3: Skip the yoghourt. Step 5: Boil (without a lid) apple mash of 250 g peeled and diced apples (like Jonnagold) together with 1 dl applejiuce and one cinnamon. The mash should bee fine and quite dry. Season to taste with sugar (should be fresh and with a little bite). Chill to room temperature, mix it with the ice cream and pour it into the ice cream machine.
